A lot of people ask me for advise on what to have really good pintxos. Well, there are a lot of places, but to make it easier for you, I will make a small list of 3 places you can do in a morning or an evening.
To start, I will go with the capital of the Basque Autonomous Region, Vitoria - Gasteiz. Here you have the ABC of the Spanish Gastronomic Capital 2014 that you have to taste in your first trip.
A Sagartoki. His owner, Senén González is one of the most popular cooks in the city. I remember making a tour with a girl from Chinese origin who had seen his pintxos in Canada and get in love with it. In its bar, close to the New Cathedral of Vitoria, you can find in exhibit like the true jewels they are, some glorious pintxos like his traditional organic “Tortilla de patata” (Spanish Omelette) and the modern pintxo “Huevo frito” with which you can taste a tasty fried egg with potatos, only in a bite!
B Toloño. In the lower area of the “Arquillos” you can find this bar, very popular for locals and that has won several prizes for their delicate pintxos. Try here the “milhojas de habitas” a salty bean millefeuille which won the prize of best Basque pintxo sometime ago, or their “Pimiento con anchoa y alcaparra” red pepper with anchovies and capers.
C Saburdi. One of the traditional bars of the city. In the hearth of Calle Dato Street. You can taste here the “Volován de boletus” a vol-au-vent with boletus or the “Pimiento relleno de bacalao y setas” a red pepper with cod and mushrooms.
