"Gâteau Basque", "Pastel Vasco" or Biskotx has a long tradition and you can find it in any festival through the Basque Country.
It was first created in the 18th Century in Cambo-les-Bains, in the region of Labourd, the Basque historical province which lies in the French Atlantic coast.
Traditionally it was made with an almond flour based cake filled with figs, cherries or blackberries.
These versions remain available, but nowadays the most popular ones are filled with pastry cream, marmelade or chocolate.
Maybe chocolate comes from the influence of the famous chocolate from the nearby city of Bayonne...
